Mamaliga is a sort of maize ‘pudding’ similar to the Italian polenta. It is an accompaniment to most Romanian dishes.

For 2 people you will need:

  • 1 cup cornmeal/maize flour
  • 2 cups water
  • 1 tsp salt
  • 1 tbsp butter

Heat the water in a non-stick pan and add the salt and butter.

When the water starts to boil, pour the cornmeal all at once and start stirring with the tail end of a long wooden spoon. The cornmeal will begin to bubble soon, at which point turn the heat down, but carry on stirring to prevent the formation of lumps.

The mamaliga will be ready in 8-10 minutes.

To test it is ready, wet the tail end of a wooden spoon with water and insert it into the maize mixture. If it is done, this will come out clean.

How firm the Mamaliga is depends on how much polenta (cornmeal) you put in, and how long you cook it for. Mamaliga is suitable for vegetarians.
